This has always been one of my favorite teas as I find it very comforting. It's a special tea from the Fujian Province. I like to bring sniffers of this tea when I do a Tea Talk so that everyone can get a good whiff of the scent. Yes, this is the one that smells like a camp fire. I find you either love it or you don't. The tea process is lengthy in that it takes a couple of extra steps to create this special tea. You'll get a dark red tea with a distinct aroma and taste.
Legend has it that the smoking process was accidentally discovered during the Qing dynasty. An army unit passed through Xingcun (pronounced "sheeng-tsun") and camped in a tea factory filled with fresh tea leaves awaiting processing. Once the soldiers left, the workers did not have enough time to process the leaves in a normal fashion and get them to market in time. So, they lit open fires of pine wood to dry the leaves more quickly. The smoky pine flavor was a bit hit at market and hence began a new process for processing their tea.
Ingredients: Black tea, special leaf Lapsang Souchong. Caffeine Level: Medium/Low
To Steep: Place 1 slightly heaping tsp of tea for 8 oz. of water in a teapot. Pour freshly boiled water over the tea. Steep 3-7 minutes. This tea is best when it is served hot, not iced.
